Once in a while I will poach a couple eggs in the microwave. Here’s the tool I use to do that. It makes a perfect poached egg in about one minute.
Today’s breakfast was a three-egg scramble. Nothing fancy.
Just three eggs, a splash of half-and-half and some coarse black pepper.
Oh, and a pinch of seasoned salt.
How I Cook My Eggs
I recently bought a vintage egg-beater on Ebay and I used it today to whip up my egg mixture. It’s an old Maynard brand.

Into a non-stick pan that’s been sprayed with non-stick spray on a medium to medium-high heat burner.
Only takes about a minute or two to cook them the way I like them — almost done.
I allow them to finish cooking off the burner. Works like a charm.
Today my go-to breakfast also included a big portion of mixed salad greens, a Roma tomato, a handful of blueberries, and a big pinch of cheddar cheese. All topped with my homemade Italian salad dressing. Recipe coming soon!
A lot of people I know don’t have breakfast. That’s certainly a personal preference.
Early Morning Person or Sleepy Head?
As a kid, I was not a breakfast person. Our habits change as we get older, don’t they?
I’m an EARLY morning person now. As a kid? Huh!
No way.
I could/would sleep until 11 o’clock in the morning on weekends.
There’s no way I could do that now. Too much to do.
Too much time wasted by sleeping have the day away. Gotta make the most of every day!
